Roasted Garlic Miso Ginger Cauliflower

Ingredients: 

5 Cauliflower florets, cut into 2 inch florets

1/3  cup sesame oil

4 Tbsp Grape seed oil 

1/2 tsp salt

1/2 cup red or white miso 

1/3 cup sugar 

1/2 cup mirin 

3 tbsp soy sauce 

3 garlic cloves, microplane 

 

Directions: Heat the oven to 500 degrees F. Toss the cauliflower in the sesame oil, grape seed oil,  and season with a little salt. Place on a baking tray lined with baking paper and roast for 25 minutes, or until the cauliflower is browned. 

 

Meanwhile, In a sauté pan, on medium low heat, pour mirin, allow it too cook down for 30 seconds, it should start bubbling. Then add miso paste, stir in for 3 minutes. Then add sugar, soy sauce, and garlic. Cook on low for 2 minutes,  pour over the roasted cauliflower, tossing it on the tray to coat well. Continue to roast for a further 5 minutes, or until the miso sauce starts to caramelize. 

 

Remove cauliflower  from the oven, transfer to a serving plate, scatter with spring onion and toasted sesame seeds, and serve. Enjoy
